Last post before Scotland


I'm wicked excited about going to Scotland tomorrow. I will have many pictures when I return.
Here is what I made last night. It's yet another recipe modified from Depression Cooking.
Peppers and tofu with rice. (pictured above.)
Clara made peppers and eggs, so I substituted silken tofu for the eggs and made up my own spices to go with it. I believe I used tumeric, paprika, garlic salt, onion powder, dill and a bit of cumin. It was freaking amazing.
The peppers started out being bright orange and yellow but turned the same colour when I cooked them.
The rice is a mix of different brown rices plus some flax seeds.
